Ingredients
  • 2 cans white albacore tuna in water, well drained
  • 1 ripe Roma tomato, chopped
  • ¼ cup Kalamata olives, chopped
  • 2 teaspoons capers
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh basil, chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly cracked black pepper
  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • 2 heads of romaine lettuce, washed and chopped


Directions
  1. In a bowl, combine all ingredients for tuna salad (tuna, tomatoes, olives, capers, olive oil, lemon juice, oregano, basil, salt and pepper) together and lightly stir.
  2. Place balsamic vinegar in a separate large bowl. Slowly pour olive oil into the balsamic while whisking continuously until emulsified.
  3. Toss chopped romaine lettuce with the balsamic vinaigrette.
  4. Serve on plates starting with the dressed lettuce on the bottom, with a large dollop of Mediterranean tuna salad on top.
