Frozen Banana Bites

Ingredients
  • 2 large bananas, sliced into ¼ inch thick rounds
  • ¼ cup almond butter
  • Popsicle sticks, for serving
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil


Directions
  1. Slice banana into small rounds and place 1 teaspoon of almond butter on half of the rounds.
  2. Place the popsicle stick into the slices of banana with almond butter. Top banana bites with another banana slice so the popsicle stick is sandwiched between the two halves. Place in freezer while preparing chocolate.
  3. To prepare chocolate, melt chocolate chips and coconut oil in a small pot over low heat. Once the majority of chips are melted, remove from heat and whisk until all fully melted.
  4. Place frozen banana bites on parchment lined baking sheet. Pour chocolate over tops of bites using a spoon. Turn over and repeat until fully coated.
  5. Freeze for another 30 minutes or until firm. Keep frozen until serving.
