Bibb Lettuce Salad with Herbed Dressing

Ingredients
  • For the Dressing
  • 1½ cups plain Greek yogurt
  • ½ cup fresh parsley leaves washed and patted dry
  • ¼ cup fresh basil leaves, washed and patted dry
  • 1/8 cup fresh cilantro leaves, washed and patted dry
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • For the Salad
  • 1 head Boston Bibb lettuce, washed and patted dry
  • 1 ripe avocado, skin and seed removed
  • 1 teaspoon coarse salt


Directions
  1. To make the dressing, combine all ingredients in a food processor and pulse until the herbs are finely chopped and the dressing is smooth. Taste the dressing and adjust as desired with more lemon juice and/or salt. Cover and refrigerate until ready to use.
  2. To make the salad, roughly chop the lettuce leaves and evenly distribute them amongst 4 salad bowls. Chop the avocado and evenly distribute on top of the lettuce in each of the bowls.
  3. Drizzle approximately 2 tablespoons of the dressing over the top of each salad and garnish with coarse salt.
