Ingredients
  • 1 pound sweet potatoes
  • 1/3 cup canned coconut milk
  • 1 tablespoon blood orange zest
  • Juice of 1 blood orange
  • Salt, to taste
  • Pepper, to taste


Directions
  1. Preheat oven to 375 degrees F. Place sweet potatoes on a baking sheet and bake until soft, about 30 minutes. Remove from oven and cool.
  2. Once sweet potatoes are cool, remove skins and place in a bowl. Mash sweet potatoes until semi-smooth. Add coconut milk, blood orange zest and juice and mix well to incorporate. Season with salt and pepper to taste.
